Easy Raw Mock Potato Salad
We barbecued some Portobello mushrooms and had this mock raw potato salad with dinner. Excellent!! I have been missing the taste of potato salad. It was one of my favorite recipes handed down from my grandmother. This is my raw variation. Again, like all of my recipes, add whatever you like. For a spicy variation I would try some jalapenos!
Before the dressings:
1 head organic cauliflower chopped
1 ear organic corn
1 cup shredded purple cabbage
1/2 chopped green bell pepper
2 stalks chopped celery
Grape seed Mayonnaise
Yellow mustard
salt & pepper to taste
Bragg's seasoning
Crushed red chili's
the above ingredients need to added to your liking. Some people don't like a lot of mayonnaise, but I do, so in the tradition of my grandmother's potato salad, I caked it on, mixed it up and served it. We had a guest for dinner and Damon's 10 year old son (the one that likes the raw food we eat). No one complained!
