Saving Fresh Corn

Fresh organic corn is the best. But when you have more than you can eat what do you do with it?

I took the organic corn that we picked off our own corn stalks and the corn that we had purchased at the local farmers market and processed it down to 4 cup bags and froze it for use later.

We've noticed that raw recipes actually call for frozen corn, they state that it works better. Our first batch of corn chips were made with fresh corn and taste great. The second batch we used frozen corn, they were okay, but fresh tastes better. We will keep experimenting to find out why the recipes state frozen works better.

Since we didn't have time to make corn chips from the fresh corn, we froze it all. Here's what it looked like.



Our fresh corn actually cross pollinated. It tastes good, the ears were small but the kernels were big!



Simple as pie, just cut the kernels off as close to the cob as possible.



Neatly sealed 4 cup packages. The corn pictured above made 3- 4 Cup bags. Once again, we will not waste a single item from our garden!!

We love our new seal a meal, food saver. Do you have one stashed away in your kitchen? Have you used it lately?

    Boy, were you asking me PERSONALLY about my food saver? I have an OLD Deni brand, collecting dust in the back closet...just too much hassle to find bag-rolls plus they weren't cheap! I just use Hefty or Ziplok FREEZER bags for corn, diced tomatoes & berries (by the way, we have a second crop of Fall Gold yellow-orange raspberries going on...can you use some starts? Just bring a shovel & pots!) Oh, and think about fresh-frozen corn SALSA...GREAT in the dead of winter with some thawed tomatoes laced with cilantro (I freeze the garlic & onions right in the same bag, too)

      I don't like Ziplock because they are permeable..... Did they fix that on the freezer bags? Our new food saver also seals jars, and that was a big plus for us also. I'll ask Damon if he wants to start a Raspberry patch. Ali LOVES Raspberries, so I can't imagine he would say no! Hope to see you soon!

      You can thaw the corn, but it's not necessary, the blender will heat the corn up. If I did want to warm it up, I would bring it up to room temperature on the counter, or I could heat up water and place the corn in a bowl in the heated water, you call it a double boiler.
