Cold weather is soup weather
The weather has turned cold. I was craving soup, and we finally got our VitaMix mix blender! VitaMix claims that you can warm your blended veggies enough to bring it to "soup" temperature. Now I believe them. It DID work.
This garden vegetable soup recipe was adapted from the Raw Food Made Easy "cookbook" written by Jennifer Cornbleet.
1 small zucchini, chopped (about 2 cups)
1/2 C water, plus 1/4 C water to thin, if necessary.
1 ripe tomato, seeded and chopped
1/2 Medium green bell pepper, chopped
1 or 2 green onion, chopped
1 Tbs fresh lemon juice
1 1/2 tsp mellow white miso
1/2 tsp crushed garlic
Dash Cayenne
Dash salt
1 Cup chopped spinach or chard (we used Kale)
6 fresh basil leaves
1/2 ripe avocado, chopped
1/4 C Nama Soya (helped the bitter Kale flavor)

Blend zucchini, 1/2 cup water, tomato, celery, green onion, bell pepper, process until smooth. Add the spinach (or other green), basil and blend again. Add the avocado and blend until smooth. Add the remaining 1/4 Cup water to thin if necessary. Serve immediately. For a chilled soup, refrigerate for 30 minutes before serving.

Stage one with all the veggies.

Add the greens and blend again.
We topped with fresh Cilanto and added a splash of Nama Soya for the final touch.
It was green, filling, and tasted great!!! The amazing thing about this living food is that it is filling and full of energy. I vacuumed for an hour, took a bath and watched a movie after eating dinner. I am amazed at the energy I have!! Any questions?
