Easy Tomato Cucumber Salad with Kale

We had an abundance of tomatoes from both our garden and our neighbors garden. There are probably 7 different varieties. I did not have a recipe, anyone can make this. I will note that I made it earlier in the day and let it set in the refrigerator for approx 3 hours to let the flavors soak in.


Raw Tomato Cucumber Salad recipe
Tomatoes (any variety, we had some of our own heirlooms in there, mmmmm)
Cucumber (we had an Armenian from the Garberville farmer's market)
Green onion
Fresh Basil
Jalapeno
Rice Wine Vinegar
Sesame Oil (we love the lightness of sesame oils)
Salt
White Pepper

All ingredients are to taste. I tasted it alot while I was making it to make it perfect!!

Kale Salad recipe:
Kale
Lemon (breaks the outside oils on the kale down to absorb herbs and spices)
Garlic
Salt (use more than you think you would need.....always Himalayan or at least hand harvested Sea Salt)
Sesame Oil

Use scissors to trim Kale as small as you like. Message the kale with all ingredients and enjoy!

We added a small slice of onion and 1/4 of an Avocado for a little flavor.

A glass of Frey Organic Merlot rounded the meal out perfectly.

I have to discuss onions. I never liked onion. I had thought that recipes used them for fillers. Actually I still think that...but raw, onions are awesome! I'm finding that I finally like onions. I use them in small portions and always raw. The flavors explode!! Food tastes so much better in their raw form. Even if you don't go 80-90-100% raw, try more raw food. Eat more raw fruits and veggies!! It's a start! You'll feel better, you'll lose weight, you'll eventually heal yourself. Start now and just increase slowly!
